Idly/Kranti Rice

Idly rice, also known as Kranti rice, is a short-grain rice variety commonly used in South India for making traditional dishes like idlis, dosas, and appams. It has a starchy and soft texture, making it ideal for preparing fermented batter-based dishes. The rice is typically soaked and ground into a smooth batter along with urad dal (black gram), which is then fermented to create fluffy, soft idlis or crispy dosas.

Kranti rice is preferred for its consistency in texture and flavor, contributing to the light and airy structure of idlis and the crispiness of dosas.
